Man O' War Say: Aromas of citrus and pear with hints of cinnamon are balanced with a very linear low pH structure that is all about fresh crispness balanced by natural residual sugar. 2019 saw impeccable fruit with little to no botrytis resulting in a Wine of great purity and a classical structure. Man O' War Estate Pinot Gris is grown on a number of vineyards on both Ponui Island and Waiheke Island, all elevated hillside sides which are exposed to the cooling breezes coming off the Pacific ocean. A classic Baduzzi dish, which has been on our menu for years! I love to pair this with a wine with some residual sugar because the sweetness brought by the figs it’s a key component in the dish. That’s why I think this Pinot Gris from Man o’War makes a great companion to the dish, as it has a floral and stone fruits note which goes beautifully with the tangy goat’s curd.
