Greystone is 100% certified organic with BioGro. Crop management is done meticulously by hand without herbicides, insecticides or systemic fungicides, using organic methods and biodynamic soil management to proactively promote soil and vine health. It's a hands-on approach that means being intimately connected to the blocks, walking the rows and being attuned to subtle changes in the soil, vines and grapes. It's labour intensive, but it's also how you make truly remarkable wine. For us, it's a labour we love. At harvest we handpick the bunches and bottle unfiltered whenever possible. Bottling unfined and unfiltered reveals more layers and complexity; it's like listening to your favourite album on vinyl and hearing richer, more nuanced tones. It's wine for slowing down and savouring.
The vineyard fermented Pinot Noir is hand picked and fermented outside in the vineyard rows where the fruit was grown. We allowed the fruit to start fermentation in its own time and respond to the rhythm of the season. Therefore the fermentations are driven not only by indigenous vineyard yeast but also the ambient temperatures. So we are extended the vintage influence on the wine itself. We gently hand plunge the vats once per day and then allow a short maceration post-ferment for balance and harmony. The young wine is then aged for 15 months in old oak barrels before being estate bottled - unfined and unfiltered. Graceful, pure & enchanting in the mouth with slippery tannins & a freshness that belies the density on the finish.
