Deep crimson/purple, with bright uplifted forest berry fruits youthfully appealing with fine silky tannins, suit being chilled on a summer's day. DRY.

Naturally made organic wine showcasing pure Pinot Noir character from Southern Valley terroir—unfiltered, unfined, and utterly authentic.

The Process

Handpicked organic Pinot Noir grapes undergo 10% whole cluster wild fermentation with indigenous vineyard yeasts. Gentle hand plunging during fermentation and maceration on skins, then pressed off to puncheon and barrique where malolactic fermentation completes naturally. The wine settles on its own lees before racking to tank pre-bottling in late August with minimal 10ppm sulphur addition. Unfiltered and unfined—all yeast and bacteria come from the grape itself.

Perfect with grilled lamb, wild mushroom dishes, or charcuterie boards. The silky tannins and bright berry character complement earthy flavours and complement both rustic and refined cuisine beautifully.
