Hebe Red is a natural Pinot Noir made by Rebecca Salmond under the Hebe sub-label of Odyssey Wines, crafted from handpicked certified organic Pinot Noir on Odyssey's Southern Valley vineyard using wild fermentation and minimal sulphur addition.

Tasting Notes

Deep crimson/purple, with bright uplifted forest berry fruits youthfully appealing with fine silky tannins, suit being chilled on a summer's day. DRY.

A naturally made, unfiltered Pinot Noir with genuine freshness and purity, reflecting Odyssey's Southern Valley site through minimal intervention winemaking.

The Process

Handpicked certified organic Pinot Noir undergoes 10% whole cluster wild fermentation with indigenous vineyard yeasts. Gentle hand plunging during fermentation and maceration on skins, then pressed to puncheon and barrique where malolactic fermentation completes naturally. The wine settles on its own lees before racking to tank pre-bottling in late August with minimal 10 ppm sulphur. Unfiltered and unfined.

About Hebe by Odyssey

Hebe is the natural organic wine produced by Odyssey Wines in Marlborough. These are challenging and exciting wines fully reflective of the Southern Valley terroir from which they come: nothing added and nothing taken away. The wines are unfiltered and unfined, with all yeast and bacteria coming from the grape, and the natural fining coming from time on its own lees in the barrel. Hebe is named after the Greek goddess of youth, daughter of Hera and Zeus, reflecting the vitality and natural energy of these terroir-driven wines.

Perfect with grilled lamb cutlets, a wild mushroom and thyme tart, or aged manchego with quince paste. The bright berry character and silky tannins sit beautifully alongside earthy and savoury flavours.
