The Blend
Hebe "white" 2023/2024 is a minimal-intervention wine made using handpicked 75% Organic Pinot Gris/Sauvignon Blanc 2024 from the Odyssey Southern Valley vineyard and 25% Mendoza Chardonnay 2023 grapes from Gisborne's Golden Triangle. By combining varieties, regions, and vintages, this wine achieves remarkable texture, length, and a playful character.
Handpicked grapes were whole bunch pressed into French puncheons, then fermented wild to dryness with a full malolactic. After fermentation, the wine settled on lees before being racked out of puncheon and blended into tank pre-bottling with 10 ppm sulphur. Bottled late November 2024.
About Hebe
Hebe is the natural organic wine produced by Odyssey Wines in Marlborough. These are challenging and exciting wines fully reflective of the Southern Valley terroir from which they come—nothing added and nothing taken away. The wines are unfiltered and unfined, with all yeast and bacteria coming from the grape, and the fining coming from time on its own discarded yeast cells in the barrel.
Hebe is named after the Greek Goddess of youth, daughter of Hera and Zeus. Her powers are among the most mighty in mythology—the power to make a person feel youthful. This philosophy of vitality and natural energy is reflected in every bottle of these terroir-driven wines.
Perfect with fresh oysters, goat cheese salad, or grilled white fish. The natural acidity and textural complexity complement both delicate seafood and creamy preparations beautifully.
