Tasting Notes

 Elegantly rich and alluring on the nose, showcasing notes of blackberry, floral accents, olive, and cedary oak. The palate is impressively concentrated, offering refined texture and chalky tannins. It is multi-layered and beautifully complex, with superb structure and presence.

The Process

Traditional open fermentation and 14 months in selected French oak create the refined texture and complex character that defines this special release.  

The wine was fermented in open fermenters, with plunging employed to help preserve flavour and facilitate gentle tannin extraction, enhancing texture. Individual block ferments were kept separate and left on the skins until the desired extraction levels were achieved. Once this was accomplished, the individual parcels were basket pressed and transferred to selected French oak barrels for 14 months.
