The Winemaking

Manual selective harvest, then crushing and destemming. Fermentation takes place in stainless steel at a controlled temperature, with maceration on the skins.

About San Silvestro

San Silvestro is a family winery in Novello, in the heart of the Langa del Barolo in Piedmont. Giovanni Sartirano began the business in 1871, and today it is run by Paolo and Guido Sartirano, the fourth generation of the family, who farm about 7 hectares and work with trusted local growers.

Perfect with cold meats, pasta or red meats. It also takes a light chill in summer, with salads or a casual snack.
